    VINIFICATION First selection in the vineyard. Complete harvest in small crates. Pellicular maceration at low-temperatures for 10 hours for the Sauvignons blancs. Pneumatic pressing of the whole harvest for roughly 2 hours. Racking of the must at low temperature for 24 hours in new barrels. Cold stabulation for 5-7 days. Alcoholic fermentation partly in an egg-shaped vat, and partly in new barrels at 15°C-18°C for about 15 days. Aged on lees for 8-10 months with stirring once or twice per week. The wine is not filtered at any stage. All vinification and aging processes take place by gravity. COMMENTARY Full-bodied, full-flavored power. A floral nose with toasted notes and a slight bitterness. GRAPE VARIETY 40% Sémillon, 30% Sauvignon Blanc, 30% Sauvignon gris

    VINIFICATION Hand harvested in small crates. Sorting on table before and after destemming. Casked into oak vats by gravity. Maceration prior to fermentation. Manual hand-plunging. Run-off into French-oak barrels, 50% of which are new. COMMENTARY Sight: Ruby red, with luster and clarity. Smell: Expressive nose of regular complexity, primary notes of red fruits, blackcurrants and cherry. Taste: Appealing, supple and light. The palate is characteristic of its balance: acidity and almost total absence of tannins enhance the impression of roundness. Attractive, elegant and fresh finish. GRAPE VARIETY 77% Merlot, 9% Cabernet Sauvignon et 14% Cabernet Franc.

    WINEMAKING Hand harvested in small crates. Ginning manual and vatting gravity without crushing in small wooden vats. Maceration. Manual punching down. Direct run off by gravity into new French oak barrels for malolactic fermentation and aging. Tasting Note Expressive, full and dense. It surprises with its range of ripe fruit but no jam and finesse. GRAPES: 100 % Merlot

    Hand harvested in small crates with initial sorting in the vineyard. Grapes hand-picked from clusters of 15% of the harvest with E1-type mechanical destemming for the remainder. Casked in wooden vats without crushing. Cold maceration prior to fermentation. Concentric hand-plunging. Aged in new French-oak barrels for 70% of the volume for 18 months on lees with regular stirring.
