The kosher Brut from Charles de Ponthieu is a cuvee typical of the region combining the finesse of Chardonnay, the fruit of Pinot Meunier and the structure of Pinot Noir. This kosher champagne is made by the rabbanical delegates, or Shomrim, with the surveillance of the cellar-master whose objective is the excellence of his production.
From pressing of the grapes, and blending, right up to the final bottling, every operation is strictly controlled. The vats in which the wine is made are carefully sealed by the Shomrim at the end of each operation and the seal is only broken when the next stage of the winemaking is undertaken by the Shomrim.
All utensils and material are made kosher by a passage in boiling water, to eliminate all impurities.
